Pumpkin Pie Overnight Oats

Nothing’s better than waking up on a crisp autumn morning! You roll out of bed, catch a glimpse of the beautiful fall foliage just outside your window, put on your coziest sweater, and light one of those decedent autumn-scented candles. Yea, it’s pretty nice.

 

One of my favorite things about fall is that everything in the world seems to be labeled “pumpkin spice”. The mixture of cinnamon, nutmeg, allspice, and whatever the heck else they put in that magical concoction gets me every time. Honestly, the only thing more enticing than pumpkin spice is pumpkin pie!

 

So, what if I told you there was a way you could have pumpkin pie for breakfast… and it actually be healthy?! Well, it’s not exactly pie, but I think it’s almost as good. That’s right, I’m talking about pumpkin pie overnight oats!

 

Overnight oats are truly a life-saver. They are ridiculously easy to make and great to grab when you’re on the go. Not only that, but they are delicious and hearty! A serving of these always keeps me satisfied and helps me resist mid-morning snacking. And, want to know the best part? Overnight oats can be customized so that you can make then in almost any flavor… including pumpkin pie! I mean, pie for breakfast... could you really ask for more?

Yields1 Serving

 ½ cup Oats
 ½ cup Milk of your choice (I used unsweetened coconut milk), add more if desired
 ½ tsp Pumpkin pie spice
 ¼ cup Pumpkin puree
 1 tbsp Brown sugar
Optional Ingredients
 1 tbsp Chia Seed (Or more, great source of fiber)
 1 tbsp Hemp Hearts (Or more, great source of protein)
 1 tbsp Honey (Drizzle on top)
 1 tbsp Greek Yogurt (just a dollop on top!)

Start by filling your mason jar with the oats. Next add pumpkin pie spice, brown sugar, and Hemp/Chia seeds (if you so desire). Take a spoon and stir everything together to make sure that all of the spice and sugar is evenly distributed (trust me, you don’t want to accidentally scoop up a spoonful of pumpkin pie spice all at once!).

Pour in your milk and stir again. Now it’s time for my favorite part… pumpkin! Add your preferred amount of pumpkin puree to the mixture and swirl it in. Screw the lid tightly onto your mason jar and shake the entire thing for a few seconds to ensure everything is evenly dispersed. Now all you have to do is put your oats in the fridge and wait until morning… yeah, it’s that easy!

When you’re ready to dig in, unscrew the lid and top off your oats with a dollop of greek yogurt or a drizzle of honey… or both! Overnight oats should last for about 5 days in the fridge, but they are usually best when eaten on day 1 (the morning directly after you mix them up) or day 2.

Now, go ahead and eat these delicious oats up! They will give you the all of the strength, energy and pumpkin spice you need for the beautiful fall day ahead.
