I’ll let you all in on a secret: peanut butter and bananas are my guilty pleasure. I mean, whip me up a pb & b sandwich any day and I’ll be over the moon with happiness. And don’t even get me started with peanut butter banana ice cream… it’s to die for in my opinion! I would love to go back in time and thank the genius that put these two flavors together to create the most amazing party on my tongue. And the only thing better than peanut butter and bananas is peanut butter, bananas and chocolate.

I’ve been obsessed with overnight oats for the past couple of weeks and I can’t wait to share my new favorite recipe with you: peanut butter banana overnight oats!
I’ve said it before and I’ll say it again: you can’t find an easier, healthier, or tastier breakfast than overnight oats. I mean, a simple pour, stir, shake and refrigerate is all you have to do to whip up a serving of these wonder-oats. Overnight oats always help me to feel energized all morning and be the best I can be. I’ve been able to focus and work so much better when I eat these in the morning… not to mention they fight off that mid-morning hunger until my lunch break.
Needless to say, I was super excited to try these oats and I could hardly wait for morning to come so I could dig in!

*Note: I used coconut milk, but you can use whichever type you have in the fridge. Just make sure to check the expiration date before you pour it so that you know when you have to indulge in these oats by. Nothing is worse than opening the fridge in the morning and discovering you’ve made sour oats!
Take your mason jar and fill it with the old fashioned oats and milk. Screw the lid back on and shake well to get every oat coated. Stir in your peanut butter and sliced banana. If you’d like to add chia seeds, hemp hearts, or chocolate chips, you can do that now. Now, wasn’t that easy?!
Screw the lid on tightly and place the jar in your fridge. I recommend marking the date you made it with a piece of tape and a pen (also, you can make a note of when the milk expires on this piece of tape to avoid sour oats). Overnight oats get softer the longer you let them sit and are typically good for 5 days in the fridge as long as they are in an airtight container. However, they are usually best when eaten on the first or second morning.
When you are ready to eat your oats you can top them off with a dollop of Greek yogurt, a scoop of fresh fruit, a handful of chocolate chips… or all of the above!
