Almond Coconut Overnight Oats

 

Whenever I eat anything with coconut in it I am immediately reminded of sweet summertime and the beach. I mean, there’s really no better way to spend a day than sitting on a sandy shore and listening to the waves crash while sucking down a piña colada. Coconut is one of those flavors that instantly brightens my mood whenever I taste it… I guess I’m just coco-loco!

 

One breakfast item I’ve been making a lot recently is overnight oats. I mean, they’re so easy to make and quick to grab as I run out the front door on a busy morning. And not only are they delicious, they are also packed with nutrients and energy to help me get through even the toughest Monday (yea, really!).

 

The last few weeks have been crazy for me. My days have been filled with tons of work, errands, and a lot of rain (ugh!). I’ve been craving a vacation, and since I don’t have the ability to get away right now, I figured I’d pretend like I was on a tropical beach by whipping up a concoction of overnight oats using coconut flakes and slivered almonds. And, let me tell you, I’m sure glad I did! I mean, WOW, this breakfast is absolutely heavenly!

 ½ cup Old Fashioned Oats
 Milk (I used coconut, but you can use any type)
 23 tbsp Shredded Coconut (Plus a little extra to sprinkle on top)
 12 tbsp Slivered Almonds
Optional
 12 tbsp Chocolate Chips (or more, we won't judge!)
 Honey (to drizzle on top)
 1 drop Greek Yogurt
 23 tbsp Chia Seeds and/or Hemp Hearts (for a boost of added protein and fiber)
 1 Mason Jar with screw on lid

*Note: you can add or subtract the amount coconut and slivered almonds in your oats to fit your taste preference. Also, feel free to use unsweetened, sweetened, or toasted coconut flakes.

Take your mason jar and fill it with ½ cup of old fashioned oats. Pour your choice of milk into the jar and stir with a spoon so that all of the oats are evenly coated (we don’t want any dry patches!).

Add the shredded coconut (either sweetened, unsweetened, or toasted), slivered almonds, chia seeds and hemp hearts if you desire. Stir the mixture to make sure that everything is evenly distributed. You can add the chocolate chips now or wait until the morning to mix them in. Screw the lid onto your mason jar tightly and place in the refrigerator. Now all you have to do is get some sleep and wait until the morning!

When you wake up and are ready for breakfast, take your jar out of the fridge and sprinkle some more coconut flakes on top to make it pretty. You if you want your oats a little sweeter, drizzle some honey on top or add some chocolate chips. Do you want them creamier? Add a dollop of greek yogurt. Now all you have to do is grab a spoon and dig in!

*Note: Overnight oats can last up to 5 days in the refrigerator. The longer they sit, the softer they become. However, watch the date of the milk you use to make sure they don’t turn sour on you.
